GSH is the reduced form of glutathione. GSSG is the oxidized form of glutathione.
GSH是 還原型 的 穀胱甘肽。GSSG是 氧化型 的 穀胱甘肽。
Glutathione is an important tripeptide present in significant concentrations in all tissues. It contains glutamic acid, cysteine, and glycine. What is unusual about the structure of glutathione (bottom figure in the left graphic; Compare it to a "normal" tripeptide of glu-cys-gly (top graphic).
Instead of the usual backbone, the carboxyl acid "side chain" is part of the backbone peptide structure. The normal carboxyl group is the so called side chain in this case.
The function of glutathione is to protect cells from oxidizing agents which might otherwise damage them. The oxidizing agents react with the -SH group of cysteine of the glutathione instead of doing damage elsewhere. Many foreign chemicals get attached to glutathione, which is really acting as a detoxifying agent.

穀胱甘肽 Glutathione 是由 三種 胺基酸 amino acid 組成的。中間那一個 胺基酸 就是 半胱胺酸 Cysteine。智慧風華 裡面就含有 半胱胺酸。因為 穀胱甘肽 左右兩邊的 胺基酸，左邊的 穀胺酸 Glutamic acid 和 右邊的 甘胺酸 Glycine，在身體裡面的庫存量比較多。所以當 穀胱甘肽 不足的時候，我們最主要是 需要補充 半胱胺酸。因為 穀胱甘肽 在細胞內部的各種 生化反應 中扮演著非常重要的角色，所以我們身體內部的各種細胞都具有能力，可以自己合成 穀胱甘肽 這種重要的生物分子；但是我們的細胞沒有辦法無中生有，因此我們要適當地提供 半胱胺酸，以確保在我們細胞內部，穀胱甘肽 之濃度是適當的。
穀胱甘肽 和 維他命C 是水溶性區域裡面，兩種最主要的抗氧化劑。維他命E是細胞膜上面很重要的抗氧化劑。當 維他命E 受到破壞的時候(維他命E被氧化的時候)， 維他命C 會去修復 維他命E (維他命C會把被 氧化的維他命E 還原成 還原型的維他命E)。當 維他命C 去幫助 被氧化的維他命E 之後，它自己就被氧化了。被氧化的維他命C 需要 穀胱甘肽 的協助，才能夠再被還原成 還原型的維他命C。如果 被氧化的維他命C 在還沒有被還原之前，又再一次被氧化的話，這個 維他命C 的分子 就會被拆解掉，而無法 被回收再利用。這就是為什麼我們需要經常持續地補充維他命C，因為並不是所有被氧化的維他命C，都可以及時地被 穀胱甘肽 把它還原回去它在還沒有被氧化之前的狀態。
不管是動物細胞或是植物細胞都有很大的一部分是由水所組成的。也因此，維他命C 和 穀胱甘肽 對於維持動物細胞和植物細胞的健康都是非常重要的。
